Giving Your Kids a Solid Foundation

The Importance of a Solid Foundation for Kids

They need someone there when they are young to take care of them when they are sick, to teach them right from wrong, and to generally provide stability in their lives. Researchers have determined that the solid foundation is especially crucial in the early years, from birth through age three.

Although nobody’s perfect and your child will undoubtedly be first in line to let you know this once she is a teenager, here are some suggestions to lay a good foundation for your children.
Stability and Routine

Stability and routine are important to children. Most parents can’t be with their children 24/7, but maybe there’s a particular time of day when you can be with your child consistently. For example, some parents work late but manage to be home for story time every night. Other parents can always be available in the morning to make a healthy breakfast, set out the backpacks and see the kids off to school.

If you have odd hours but can be around in the middle of the day, that can work, too – for example, many elementary schools allow parents to sit in the cafeteria with their children for a special lunch together. Anything will work as long as you’re providing some stability and familiar routine.

Reading

One way to provide some familiar routine is to read to your child every night. Reading to your child is a huge contribution to your child’s solid foundation. Experts say even from the womb your baby will get used to the sound of your voice and will find it very comforting.

Reading to babies teaches them about communication, builds listening and memory skills and exposes them to numbers, letters and new words in a fun way that can become a part of your daily routine. Researchers say that reading to your child as a baby will give them a stronger vocabulary by age two and make them a better reader later.

The National Institute for Child Health and Human Development has done research that has led them to say, “Reading is the single most important skill necessary for a happy, productive and successful life. A child that is an excellent reader is a confident child, has a high level of self-esteem and is able to easily make the transition from learning to read to reading to learn.” What better way to lay a solid foundation than to read a few minutes every night.

Beyond the Basics

Beyond the basics of ensuring that you provide your children with healthy food, exercise, love them and keep them safe, you could drive yourself crazy considering all the things you have to teach them — right from wrong, how to be a good friend, how to do algebra, stress management, responsibility, your values. You could read all the childcare books ever written and they’d all say something different.

In the end, it all comes down to the quality time they spend with you. Kids learn by example and you’re their example. Maybe they’ll learn how to play checkers, how to root for their favorite baseball team, how to be a good sport. Maybe they’ll learn the importance of a family vacation at the lake.

All of these seemingly little things add up to make your child the wonderful child that they are going to become. You’re a good guide. Just go forward and be yourself and do your best.

Delicious Cider Glazed Brussels Sprouts

Cider Glazed Brussels Sprouts with Bacon and Almonds

BrusselSproutsRethink Brussels sprouts with this delicious recipe. Hey – it has bacon – it’s got to be good!

Ingredients

  • 4 slices of bacon, chopped (you may also use turkey or beef bacon)
  • 1 tablespoon of butter
  • 1 small red onion, thinly sliced
  • 2 pounds of Brussels sprouts, trimmed and halved
  • ¾ cup of apple cider
  • ¼ cup of sugar
  • ½ teaspoon of salt
  • ¼ teaspoon of ground nutmeg
  • ¼ teaspoon of freshly ground black pepper
  • ¼ cup of toasted, sliced almonds

Instructions

Cook the bacon in a large skillet until it is crisp. Remove the bacon from the skillet and allow it to drain on paper towels. Save 1 tablespoon of drippings from the skillet and discard the rest.

Add the butter, onions and Brussels sprouts to the drippings. Cook these on medium-high for 1 to 2 minutes or until the vegetables are slightly browned. Add the next five ingredients in a small bowl and then pour the mixture over the sprouts. Cook this for an additional 5 minutes or until all of the liquid has evaporated and the sprouts are glazed evenly. Stir the mixture occasionally and then stir in the browned bacon.

Spoon the sprouts into a serving bowl and top them with the toasted, sliced almonds.

Candied pecan ingredients include:

  • 2 tablespoons of unsalted butter
  • 2 tablespoons of packed light brown sugar
  • 1/2 cup of raw pecans

Maple-balsamic dressing ingredients include:

  • 1 small shallot, finely diced
  • 1 teaspoon of Dijon mustard
  • 2 teaspoons of balsamic vinegar
  • 1/4 cup of extra-virgin olive oil
  • 2 teaspoons of maple syrup
  • Kosher salt and freshly ground black pepper

Salad ingredients include:

  • 1 head endive, leaves separated
  • 2 hearts frisee lettuce, hand torn
  • 1 large radicchio, leaves torn
  • 1 red pear, sliced
  • 1/4 cup shaved Parmesan
  • To make the candied pecans, set a nonstick pan over medium heat. Add the butter and sugar to the pan. Once it has melted, toss in the pecans and continue to toss them to ensure they coat and cook evenly, about 1 minute. Transfer the candied pecans to a sheet tray lined with waxed paper to cool (use two forks to separate the pecans) while you prepare the salad.

Make the dressing by combining the chopped shallot, Dijon and balsamic vinegar in a large mixing bowl. Slowly drizzle in the olive oil while you whisk the ingredients together to emulsify. Add the maple syrup and season, to taste, with salt and pepper. Set the dressing aside.

Assemble salad by tossing the various greens and pear slices in a large mixing bowl with the maple-balsamic dressing. Top the salad with shaved Parmesan cheese and candied pecans.

 

Meringue Piled High Pumpkin Pie

Meringue Piled High Pumpkin Pie

Because it’s the season of pumpkins – and we just can’t get enough of them, here’s a delicious pumpkin pie to test out this weekend.

pumpkinmerpieWhat You Need:

 

  • 1 9 in. pie shell, unbaked
  • 1 1/2 C pumpkin puree
  • 1/2 C + 6 TBSP sugar, divided
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/2 tsp. + 1/8 tsp. salt, divided
  • 3 lg. eggs, separated
  • 1 C evaporated milk

How to Make It:

 Place the pumpkin puree in a large mixing bowl. Add the 1/2 C sugar to the puree. Sprinkle in the cinnamon, nutmeg, cloves and 1/2 tsp. salt.

Fold all together until completely mixed. Stir in the 3 egg yolks until mixed into the puree well.

Slowly add the evaporated milk making sure to stir while adding. Be sure the milk is mixed well into the puree.

Bring the oven temperature to 400 degrees.

Pour the pumpkin mixture into the unbaked pie shell.

Bake 35 minutes or until a knife inserted in the center of the pie comes out clean.

Remove the pie from the oven and raise the oven temperature to 425 degrees.

Place the 3 egg whites into a bowl.

Sprinkle in 1/8 tsp. salt and mix with an electric mixer until well blended.

Continue beating the mixture an add 1 TBSP of sugar at a time until blended in.

After all the sugar has been added continue beating until soft peaks form.

The meringue is done when the mixture becomes stiff and peaks form when you lift the beaters up and out of the mixture.

Spread the meringue over the baked pie making sure to go completely out to edge of the pie.

Place the pie back in the oven for 7 minutes or until the meringue begins to brown.

Place the pie on a wire rack to cool.

 

8 Servings

Tips:

Meringue shrinks during cooking so be sure to spread it to the very edge of the pie so the pie remains completely covered with the meringue once finished baking.  Use a butter knife to form the peaks in the meringue when placing it on the pie.

 

 

Quick Week Night Meals

Dinner time is family time. Unfortunately, it’s difficult to get everyone together and it’s often even more difficult to find time to prepare meals. Home prepared meals are generally healthier than take out options. With a little meal planning and some advanced preparation you can get a meal on the table in mere minutes. Here are some fast family meal ideas to help you get started.

Southern Style Crock Pot Chicken

If you have five minutes in the morning, you have time to pull this meal together. Layer the following items into your crock pot:

* 4-5 boneless, skinless chicken breasts
* 8 oz. can green chilies
* 15 oz. can of fire-roasted diced tomatoes, not drained
* 15 oz. can of corn, drained
* 15 oz. can of black beans, rinsed and drained
* 15 oz. can of pinto beans, rinsed and drained
* 15 oz. can of kidney beans, rinsed and drained

Sprinkle a packet of taco seasoning or chili powder on the mixture. Cook for 6-8 hours on low. When you get home at night, shred chicken with a fork. It should be nice and tender. Serve with tortillas and your choice of sides/toppings. Consider shredded cheese, avocado, salsa, and shredded lettuce.

The crock pot is an ideal kitchen tool for busy families. You can make soups, stews, roasts, and casseroles in your crock pot and it only takes a few minutes of your time.

Pasta Primavera

Choose your favorite pasta shape and cook according to package directions. Slice your favorite vegetables; consider zucchini slices, broccoli, carrots, and cherry tomatoes. Toss all the vegetables with a bit of olive oil. Sprinkle with salt and pepper and place in the oven for twenty minutes at 350 degrees F.

Toss the pasta with the vegetables and serve with parmesan cheese. It’s a healthy meal with grains and vegetables. Use whole grain pasta for added nutrition.

Sausage, Kale, and White Bean Soup

In a large stock pot, put five cups of chicken broth. Slice a pound of Andouille sausage and add to the pot. Add a can of white beans and one pound of coarsely chopped kale. Cook to let kale soften, then serve. It’s great with crusty white bread on the side. This recipe literally takes about ten to fifteen minutes – just long enough for the broth and ingredients to get hot.

When looking for fast family meal ideas, look to your resources. A crock pot and make-ahead recipes are a busy family’s best friend. Plan ahead, prepare what you can in advance and enjoy meal time with your family.
